Ingredients
– 1 1/2 cups all-purpose flour
– 1/2 cup cold unsalted butter, cut into small pieces
– 1/2 cup grated cheddar cheese
– 1/2 cup diced ham or bacon
– 1/2 cup diced bell peppers
– 1/2 cup diced onions
– 4 large eggs
– 1/2 cup heavy cream or milk
– Salt and pepper, to taste
– Cooking spray or oil
Instructions
1. Preheat oven to 375°F (190°C).
2. In a medium bowl, whisk together flour, butter, and a pinch of salt until the mixture resembles coarse crumbs.
3. Press the mixture into the bottom and up the sides of a mini muffin tin.
4. In a large bowl, whisk together eggs, heavy cream or milk, salt, and pepper.
5. Add diced ham or bacon, bell peppers, onions, and cheddar cheese to the egg mixture. Stir to combine.
6. Pour the egg mixture into the prepared muffin tin, filling each cup about 3/4 of the way full.
7. Bake for 15-20 minutes, or until the edges are golden brown and the centers are set.
8. Remove from oven and let cool for a few minutes.
9. Serve warm and enjoy!
