Dreamsicle Cupcakes new Year

Ingredients

– 1 1/2 cups all-purpose flour
– 1 cup granulated sugar
– 2 teaspoons baking powder
– 1/2 teaspoon salt
– 1/2 cup unsalted butter, softened
– 2 large eggs
– 2 teaspoons grated orange zest
– 2 tablespoons orange juice
– 1 teaspoon vanilla extract
– Cream cheese frosting (recipe below)
– Orange sprinkles or zest for garnish

Cream Cheese Frosting

– 8 ounces cream cheese, softened
– 1/2 cup unsalted butter, softened
– 2 cups powdered sugar
– 1 teaspoon vanilla extract
– 2-3 drops orange food coloring (optional)

Instructions

1. Preheat oven to 350°F (180°C). Line a muffin tin with cupcake liners.
2. In a medium bowl, whisk together flour, sugar, baking powder, and salt.
3. In a large bowl, using an electric mixer, beat butter and eggs until light and fluffy.
4. Add orange zest, juice, and vanilla extract; mix until combined.
5. Gradually add dry ingredients to wet ingredients; mix until smooth.
6. Divide batter evenly among cupcake liners.
7. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
8. Allow cupcakes to cool completely in pan.
9. For frosting, beat cream cheese and butter until smooth.
10. Gradually add powdered sugar; mix until smooth and creamy.
11. Add vanilla extract and orange food coloring (if using); mix until combined.
12. Frost cooled cupcakes; garnish with orange sprinkles or zest.
