Ingredients:
– 250 gm drumsticks, cut into 2-inch pieces
– 2 medium onions, chopped
– 2 cloves garlic, minced
– 1 medium tomato, chopped
– 1 teaspoon ginger paste
– 1 teaspoon curry powder
– 1 teaspoon coriander powder
– 1/2 teaspoon turmeric powder
– 1/2 teaspoon red chili powder
– 1/2 teaspoon garam masala powder
– Salt, to taste
– 2 tablespoons vegetable oil
– 2 tablespoons coconut milk (optional)
– Fresh cilantro, for garnish
Instructions:
1. Heat oil in a pan over medium heat.
2. Add onions and sauté until they’re translucent.
3. Add garlic, ginger paste, and sauté for another minute.
4. Add the chopped tomato and cook until it’s soft.
5. Add the drumstick pieces, curry powder, coriander powder, turmeric powder, chili powder, garam masala powder, and salt. Mix well.
6. Add 1 cup of water and bring the mixture to a boil.
7. Reduce the heat to low and simmer, covered, for 20-25 minutes or until the drumsticks are cooked.
8. If using coconut milk, stir it in during the last 5 minutes of cooking.
9. Garnish with fresh cilantro and serve with rice or roti.

– You can add potatoes or other vegetables like carrots or peas to the curry.
– For a creamier curry, add more coconut milk or substitute it with yogurt or cream.
– Adjust the amount of chili powder to suit your desired level of spiciness.
