Ingredients
- 1 lb (450g) ground beef or ground turkey
- 1 packet (1 oz) taco seasoning mix
- 1 cup salsa
- 1/2 cup water
- 4 large flour tortillas (8–10 inch)
- 1 can (16 oz) refried beans
- 2 cups shredded Mexican blend cheese (or cheddar)
- 1/2 cup sour cream (optional)
- 1/2 cup diced tomatoes (optional, for topping)
- 1/4 cup sliced black olives (optional)
- 2 tablespoons chopped fresh cilantro (optional, for garnish)
Instructions
- Prepare the Meat Mixture:
- In a skillet over medium heat, cook the ground beef until browned. Drain any excess fat.
- Stir in taco seasoning, salsa, and water. Simmer for 5 minutes until the mixture thickens slightly.
- Preheat and Prep:
- Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- Layer the Ingredients:
- Place one tortilla at the bottom of the dish. Spread a layer of refried beans (about 1/3 of the can) over the tortilla.
- Add a layer of the meat mixture, followed by a sprinkle of cheese.
- Repeat the layers (tortilla, beans, meat, cheese) until all ingredients are used, finishing with a layer of cheese on top.
- Bake:
- Cover the dish with aluminum foil and bake for 20 minutes.
- Remove the foil and bake for an additional 5–10 minutes, or until the cheese is melted and bubbly.
- Add Toppings:
- Let the taco bake cool slightly, then spread sour cream on top if desired. Add diced tomatoes, black olives, and cilantro for garnish.
- Serve:
- Slice into squares and serve warm. Pair with a side of guacamole, salsa, or tortilla chips!
