Easy Layered Taco Bake

Ingredients

  • 1 lb (450g) ground beef or ground turkey
  • 1 packet (1 oz) taco seasoning mix
  • 1 cup salsa
  • 1/2 cup water
  • 4 large flour tortillas (8–10 inch)
  • 1 can (16 oz) refried beans
  • 2 cups shredded Mexican blend cheese (or cheddar)
  • 1/2 cup sour cream (optional)
  • 1/2 cup diced tomatoes (optional, for topping)
  • 1/4 cup sliced black olives (optional)
  • 2 tablespoons chopped fresh cilantro (optional, for garnish)

Instructions

  1. Prepare the Meat Mixture:
    • In a skillet over medium heat, cook the ground beef until browned. Drain any excess fat.
    • Stir in taco seasoning, salsa, and water. Simmer for 5 minutes until the mixture thickens slightly.
  2. Preheat and Prep:
    • Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  3. Layer the Ingredients:
    • Place one tortilla at the bottom of the dish. Spread a layer of refried beans (about 1/3 of the can) over the tortilla.
    • Add a layer of the meat mixture, followed by a sprinkle of cheese.
    • Repeat the layers (tortilla, beans, meat, cheese) until all ingredients are used, finishing with a layer of cheese on top.
  4. Bake:
    • Cover the dish with aluminum foil and bake for 20 minutes.
    • Remove the foil and bake for an additional 5–10 minutes, or until the cheese is melted and bubbly.
  5. Add Toppings:
    • Let the taco bake cool slightly, then spread sour cream on top if desired. Add diced tomatoes, black olives, and cilantro for garnish.
  6. Serve:
    • Slice into squares and serve warm. Pair with a side of guacamole, salsa, or tortilla chips!
