fruity nutty cookies

Ingredients

– 2 1/4 cups all-purpose flour
– 1 tsp baking soda
– 1 tsp salt
– 1 cup unsalted butter, softened
– 3/4 cup granulated sugar
– 1 cup brown sugar
– 2 large eggs
– 1 tsp vanilla extract
– 1 cup chopped dried fruit (cranberries, cherries, raisins)
– 1 cup chopped nuts (walnuts, pecans, hazelnuts)

Instructions

1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
2. Whisk flour, baking soda, and salt in a medium bowl.
3. In a large bowl, cream butter and sugars until light and fluffy.
4. Beat in eggs and vanilla extract.
5. Gradually mix in flour mixture until just combined.
6. Stir in dried fruit and nuts.
7. Scoop tablespoon-sized balls of dough onto prepared baking sheet, leaving 2 inches of space between each cookie.
8. Bake for 12-14 minutes or until lightly golden.
9. Remove from oven and let cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Tips and Variations

– Use a combination of dried fruits and nuts to create a unique flavor profile.
– Add a sprinkle of sea salt on top of cookies before baking for added flavor.
– Substitute some of the all-purpose flour with whole wheat flour for added nutrition.
– Make ahead: Scoop dough balls onto a baking sheet, freeze, then transfer to an airtight container or freezer bag for up to 2 months. Bake frozen cookies for an additional 2-3 minutes.
