Instructions
1. Preheat oven to 400°F (200°C).
2. In a small bowl, mix together garlic, Parmesan cheese, thyme, paprika, salt, and pepper.
3. Rub the garlic-Parmesan mixture evenly onto both sides of the steak, making sure to coat it thoroughly.
4. Heat the olive oil in an oven-safe skillet over medium-high heat. Sear the steak for 2-3 minutes per side, or until a nice crust forms.
5. Transfer the skillet to the preheated oven and cook the steak to your desired level of doneness. Use a meat thermometer to check for internal temperatures:
– Rare: 130-135°F (54-57°C)
– Medium-rare: 135-140°F (57-60°C)
– Medium: 140-145°F (60-63°C)
– Medium-well: 145-150°F (63-66°C)
– Well-done: 150-155°F (66-68°C)
6. Remove the steak from the oven and let it rest for 5-10 minutes before slicing it thinly against the grain.
7. Garnish with chopped parsley, if desired.
