Hot Sausage Beer Cheese Dip 🤩

Ingredients:

– 1 pound hot sausage (such as Andouille or kielbasa), casings removed
– 1 medium onion, diced
– 3 cloves garlic, minced
– 1 cup beer (any type, but darker beers add more flavor)
– 1 cup shredded cheddar cheese
– 1/2 cup shredded Monterey Jack cheese
– 1 tablespoon Worcestershire sauce
– 1 teaspoon dried oregano
– Salt and pepper, to taste
– 1/4 cup chopped fresh chives or scallions (optional)

Instructions:

1. Preheat oven: Preheat your oven to 350°F (180°C).
2. Cook sausage: In a large skillet, cook the sausage over medium-high heat, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes.
3. Soften onion and garlic: Add the diced onion and minced garlic to the skillet and cook until the onion is translucent, about 3-4 minutes.
4. Add beer and simmer: Pour in the beer and bring the mixture to a simmer. Let it cook for 2-3 minutes, until the liquid has reduced slightly.
5. Combine cheese and spices: In a large bowl, combine the shredded cheddar and Monterey Jack cheese, Worcestershire sauce, and dried oregano.
6. Add sausage mixture: Add the cooked sausage mixture to the cheese mixture and stir until well combined.
7. Transfer to baking dish: Transfer the dip to a 9×13-inch baking dish or a small cast-iron skillet.
8. Bake until golden and bubbly: Bake the dip in the preheated oven for 20-25 minutes, until it’s golden brown and bubbly.
9. Garnish and serve: Remove the dip from the oven and sprinkle with chopped chives or scallions, if desired. Serve warm with tortilla chips, crackers, or vegetables.

– Add diced bell peppers or jalapeños for extra flavor and heat.
– Use Greek yogurt or sour cream to add a tangy element.
