Ingredients
– 1 pound ground beef
– 1 medium onion, diced
– 2 cloves garlic, minced
– 1 packet of taco seasoning
– 8-10 burrito-sized tortillas
– 1 can (16 ounces) refried beans
– 1 cup shredded cheddar cheese
– 1 cup shredded Monterey Jack cheese
– 1 can (16 ounces) diced tomatoes, drained
– 1/4 cup chopped fresh cilantro
– Sour cream, salsa, and avocado or guacamole (optional)
Instructions
1. Cook the ground beef: In a large skillet, cook the ground beef over medium-high heat until browned, breaking it up into small pieces as it cooks.
2. Add onion and garlic: Once the beef is browned, add the diced onion and minced garlic to the skillet. Cook until the onion is translucent.
3. Add taco seasoning: Sprinkle the taco seasoning over the beef mixture and stir to combine. Cook for 1-2 minutes, until the flavors are absorbed.
4. Warm the tortillas: Wrap a damp paper towel around a stack of tortillas and microwave for 20-30 seconds, until warm and pliable.
5. Assemble the burritos: Spoon about 1/2 cup of the beef mixture onto the center of a tortilla, leaving a small border around the edges. Add 1/4 cup of refried beans, 1/4 cup of shredded cheese (both cheddar and Monterey Jack), and 1/4 cup of diced tomatoes on top of the beef.
6. Add additional toppings: Sprinkle chopped cilantro over the top of the filling, and add any desired additional toppings (sour cream, salsa, avocado or guacamole).
7. Fold and serve: Fold the bottom edge of the tortilla up over the filling, then fold in the sides and roll the burrito up tightly. Serve hot and enjoy!

– Use leftover beef or add cooked vegetables (bell peppers, zucchini, mushrooms) to the filling for added flavor.
– Substitute shredded chicken or carnitas for the ground beef.
– Add diced jalapeños or serrano peppers for an extra kick of heat.
