lobster thermidor

ngredients

– 4 lobster tails (6 oz each)
– 2 tbsp unsalted butter
– 2 cloves garlic, minced
– 1/4 cup cognac (or dry white wine)
– 1/4 cup fish stock
– 1/2 cup grated Gruyère cheese
– 1 tsp Dijon mustard
– 1 tsp paprika
– Salt and pepper, to taste
– Fresh parsley, chopped (for garnish)

Instructions

1. Preheat oven to 400°F (200°C).
2. In a large skillet, melt butter over medium heat. Add garlic and cook for 1 minute.
3. Add cognac (or wine) and fish stock to the skillet. Bring to a simmer and cook until reduced by half.
4. Stir in Gruyère cheese, mustard, paprika, salt, and pepper.
5. Arrange lobster tails in a baking dish. Spoon the cheese mixture evenly over each tail.
6. Bake for 12-15 minutes or until lobster is cooked through and topping is golden brown.
7. Garnish with chopped parsley and serve immediately.

– Don’t overcook the lobster, as it can become tough and rubbery.
