– 2 tablespoons olive oil
– 1 onion, chopped
– 3 cloves garlic, minced
– 1 cup diced carrots
– 1 cup diced potatoes
– 1 cup diced celery
– 1 can (14.5 oz) diced tomatoes
– 2 cups fish stock (or chicken stock)
– 1 teaspoon dried thyme
– 1 teaspoon paprika
– Salt and pepper, to taste
– Fresh parsley, chopped (optional)
Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the chopped onion and cook until softened, about 5 minutes.
3. Add the minced garlic and cook for another minute.
4. Add the diced carrots, potatoes, and celery, and cook for 5 minutes.
5. Add the fish pieces, diced tomatoes, fish stock, thyme, paprika, salt, and pepper.
6. Stir gently to combine, then bring the stew to a simmer.
7. Reduce the heat to low and let the stew cook, covered, for 15-20 minutes or until the fish is cooked through and flakes easily.
8. Taste and adjust the seasoning as needed.
9. Serve the stew hot, garnished with chopped fresh parsley if desired.
