malva pudding puffs

Ingredients

For the puffs:

– 1 1/2 cups (190g) all-purpose flour
– 1/2 cup (100g) granulated sugar
– 1/4 teaspoon salt
– 1/2 cup (115g) unsalted butter, softened
– 1/2 cup (120ml) whole milk
– 2 large eggs
– 1 teaspoon vanilla extract

For the malva sauce:

– 1 cup (200g) granulated sugar
– 1/2 cup (120ml) water
– 1/4 cup (60g) apricot jam
– 1/4 cup (60g) unsalted butter

Instructions

1. Preheat oven: Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. Make the puffs: In a medium bowl, whisk together flour, sugar, and salt. Add softened butter and mix until crumbly. In a separate bowl, whisk together milk, eggs, and vanilla extract. Pour the wet ingredients into the dry ingredients and mix until a smooth dough forms.
3. Pipe the puffs: Transfer the dough to a piping bag fitted with a round tip. Pipe small, round shapes onto the prepared baking sheet.
4. Bake the puffs: Bake for 15-20 minutes, or until puffs are golden brown.
5. Make the malva sauce: In a small saucepan, combine sugar, water, apricot jam, and butter. Bring to a boil over medium heat, then reduce heat to low and simmer for 5-7 minutes, or until the sauce has thickened slightly.
6. Assemble: Split the puffs in half horizontally. Spoon some malva sauce over the bottom half of each puff, then top with the top half.
7. Serve: Serve warm, dust with powdered sugar if desired.

– Use a high-quality apricot jam for the best flavor.
– Add a sprinkle of cinnamon or nutmeg to the malva sauce for extra spice.
– Serve with a scoop of vanilla ice cream or whipped cream for a decadent treat.
– Experiment with different flavors, such as adding a teaspoon of vanilla extract or a pinch of salt to the puffs.
