Ingredients
– 3 ripe mangos, diced
– 2 cups heavy cream
– 1 cup whole milk
– 1/2 cup granulated sugar
– 1 tsp vanilla extract
Equipment
– Ice cream maker (optional)
– Blender or food processor
– Mixing bowl
– Measuring cups and spoons
– Freezer-safe container with lid
Instructions
Option 1: Using an Ice Cream Maker
1. In a blender or food processor, puree the diced mango until smooth.
2. In a mixing bowl, combine the mango puree, heavy cream, whole milk, and granulated sugar. Whisk until sugar is dissolved.
3. Add vanilla extract and whisk to combine.
4. Cover the bowl with plastic wrap and refrigerate the mixture for at least 2 hours or overnight.
5. Remove the mixture from the refrigerator and pour it into an ice cream maker.
6. Follow the manufacturer’s instructions to churn the ice cream.
7. Once the ice cream is churned, transfer it to an airtight container and place it in the freezer to harden for at least 2 hours.
Option 2: Without an Ice Cream Maker
1. In a blender or food processor, puree the diced mango until smooth.
2. In a mixing bowl, combine the mango puree, heavy cream, whole milk, and granulated sugar. Whisk until sugar is dissolved.
3. Add vanilla extract and whisk to combine.
4. Pour the mixture into a freezer-safe container with a lid.
5. Cover the container with plastic wrap or aluminum foil and place it in the freezer.
6. Every 30 minutes, remove the container from the freezer and use a fork to scrape the mixture and break up any ice crystals that have formed. This is called “tempering” and will help the ice cream to be smooth and creamy.
7. Repeat the tempering process for 2-3 hours, or until the ice cream has reached the desired consistency.
Tips and Variations
– Use ripe but firm mangos for the best flavor and texture.
– Adjust the amount of sugar to your taste, depending on the sweetness of the mangos.
– Add a pinch of salt to balance the sweetness and flavors.
– Mix in chopped nuts, shredded coconut, or a sprinkle of cardamom powder for added texture and flavor.
– Experiment with different types of milk, like almond or soy milk, for a non-dairy version.
