- 1 cup beef broth (low-sodium)
- 1 cup sour cream
- 1 tbsp Dijon mustard
- 1 tsp Worcestershire sauce
- 1 tsp paprika
- Salt and pepper to taste
- 1 tbsp fresh parsley, chopped (for garnish)
To Serve:
- 12 oz (350g) egg noodles or pasta of choice, cooked and drained
Instructions:
- Prepare the Beef:
- Season the beef strips with salt and pepper. (Optional: Lightly coat the beef strips in flour for a thicker sauce.)
- Heat olive oil in a large skillet over medium-high heat. Sear the beef in batches for 1–2 minutes per side until browned but not fully cooked. Remove and set aside.
- Make the Sauce:
- In the same skillet, reduce the heat to medium and melt the butter.
- Add the onions and garlic, sauté until soft and fragrant (about 3–4 minutes).
- Add the mushrooms and cook until they release their liquid and start to brown (about 5–6 minutes).
- Combine the Flavors:
- Stir in the beef broth, Dijon mustard, Worcestershire sauce, and paprika. Bring to a simmer.
- Lower the heat and mix in the sour cream until smooth. Do not let the sauce boil, as sour cream may curdle.
- Finish Cooking:
- Return the beef (and its juices) to the skillet. Simmer gently for 5–7 minutes until the beef is tender and the sauce thickens slightly. Adjust salt and pepper to taste.
- Serve:
- Toss the cooked egg noodles with the stroganoff sauce or serve the sauce over the noodles.
- Garnish with freshly chopped parsley.
