Mouthwatering Beef Stroganoff

Ingredients:

For the Beef:

  • 1 ½ lbs (700g) beef sirloin or tenderloin, thinly sliced into strips
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 2 tbsp all-purpose flour (optional, for coating)

For the Sauce:

  • 3 tbsp unsalted butter
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 8 oz (225g) cremini or button mushrooms, sliced
  • 1 cup beef broth (low-sodium)
  • 1 cup sour cream
  • 1 tbsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1 tbsp fresh parsley, chopped (for garnish)

To Serve:

  • 12 oz (350g) egg noodles or pasta of choice, cooked and drained

Instructions:

  1. Prepare the Beef:
    • Season the beef strips with salt and pepper. (Optional: Lightly coat the beef strips in flour for a thicker sauce.)
    • Heat olive oil in a large skillet over medium-high heat. Sear the beef in batches for 1–2 minutes per side until browned but not fully cooked. Remove and set aside.
  2. Make the Sauce:
    • In the same skillet, reduce the heat to medium and melt the butter.
    • Add the onions and garlic, sauté until soft and fragrant (about 3–4 minutes).
    • Add the mushrooms and cook until they release their liquid and start to brown (about 5–6 minutes).
  3. Combine the Flavors:
    • Stir in the beef broth, Dijon mustard, Worcestershire sauce, and paprika. Bring to a simmer.
    • Lower the heat and mix in the sour cream until smooth. Do not let the sauce boil, as sour cream may curdle.
  4. Finish Cooking:
    • Return the beef (and its juices) to the skillet. Simmer gently for 5–7 minutes until the beef is tender and the sauce thickens slightly. Adjust salt and pepper to taste.
  5. Serve:
    • Toss the cooked egg noodles with the stroganoff sauce or serve the sauce over the noodles.
    • Garnish with freshly chopped parsley.

Tips for Success:

  • Beef Choice: Use tender cuts like sirloin, tenderloin, or ribeye for the best results.
  • Make Ahead: The sauce can be made in advance; simply add the beef before serving.
  • Thicker Sauce: Add a cornstarch slurry (1 tsp cornstarch mixed with 1 tbsp cold water) if you want a thicker consistency.
