For the Brownie Layer

– 1/4 cup maple syrup
– 1/4 cup coconut oil

– 1 cup vegan cream cheese (or regular cream cheese)
– 1/2 cup powdered sugar
– 1/4 cup unsweetened almond milk
– 1 teaspoon vanilla extract
For the Assembly
– 1 tablespoon unsweetened cocoa powder (for dusting)
Instructions
Prepare the Brownie Layer
1. In a food processor, combine the oats, date paste, cocoa powder, maple syrup, coconut oil, vanilla extract, and salt. Process until well combined and a dough forms.
2. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
Prepare the Cream Filling
1. In a mixing bowl, combine the cream cheese, powdered sugar, almond milk, and vanilla extract. Mix until smooth and creamy.
Assemble the Rolls
1. On a lightly floured surface, roll out the brownie dough to a thickness of about 1/4 inch.
2. Spread the cream filling evenly over the brownie dough, leaving a 1-inch border around the edges.
3. Roll the dough into a tight log, starting from one of the long edges.
4. Slice the log into 8-10 equal pieces.
5. Dust with cocoa powder and serve chilled.
