Ingredients:
For the Bhaji:
– 2 cups mixed vegetables (e.g., potatoes, carrots, peas, cauliflower)
– 1 large onion, chopped
– 2 cloves garlic, minced
– 1 large tomato, chopped
– 1 tsp cumin seeds
– 1 tsp coriander powder
– 1 tsp garam masala powder
– 1 tsp turmeric powder
– 1 tsp red chili powder
– Salt, to taste
– 2 tbsp butter
– 2 tbsp oil
– 2 cups water
– Fresh cilantro, chopped (for garnish)
For the Pav:
– 4-6 pav buns (or dinner rolls)
– Butter, for toasting
Instructions:
For the Bhaji:
1. Heat oil in a large pan over medium heat.
2. Add cumin seeds and let them sizzle.
3. Add onion, garlic, and sauté until the onion is translucent.
4. Add mixed vegetables, tomato, coriander powder, garam masala powder, turmeric powder, and red chili powder. Mix well.
5. Add salt, water, and bring to a boil.
6. Reduce heat, cover, and simmer for 20-25 minutes or until the vegetables are tender.
7. Mash the vegetables slightly using a potato masher.
8. Add butter and mix well.
For the Pav:
1. Toast the pav buns by spreading butter on them and grilling until golden brown.
Assembly:
1. Serve the bhaji hot with toasted pav buns, garnished with chopped cilantro.
2. Offer lemon wedges and chopped onions on the side.
