Ingredients
– 4 slices of bread (Ciabatta, Focaccia, or Baguette work well)
– 1/2 cup of freshly made pesto (see below for pesto recipe)
– 2 large tomatoes, sliced into 1/4-inch thick rounds
– 8 ounces of fresh mozzarella cheese, sliced into 1/4-inch thick rounds
– Fresh basil leaves, chopped (optional)
Pesto Recipe
– 2 cups of fresh basil leaves
– 1/3 cup of pine nuts (or walnuts or almonds)
– 1/2 cup of grated Parmesan cheese
– 1/2 cup of extra-virgin olive oil
– 2 cloves of garlic, minced
– Salt and pepper, to taste
Instructions
1. Preheat a panini press or grill to medium-high heat.
2. Spread a layer of pesto on each slice of bread.
3. Top two slices of bread with a slice of tomato, a slice of mozzarella cheese, and a sprinkle of chopped basil leaves (if using).
4. Top with the remaining slices of bread, pesto-side down.
5. Place the sandwiches in the panini press or grill and cook for 3-4 minutes, or until the bread is toasted and the cheese is melted.
6. Serve immediately and enjoy!
