pickled shrimped jar New Year

Ingredients:

– 1 pound large shrimp, peeled and deveined
– 1/2 cup (120 ml) white vinegar
– 1/4 cup (60 ml) water
– 2 tablespoons granulated sugar
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 1/4 teaspoon red pepper flakes (optional, for some heat)
– 2 cloves garlic, minced
– 1/4 cup (15 g) fresh dill weed, chopped
– 1/4 cup (15 g) fresh parsley, chopped

Instructions:

1. Prepare the shrimp: Rinse the shrimp under cold water and pat them dry with paper towels.
2. Create the pickling liquid: In a medium saucepan, combine the vinegar, water, sugar, salt, black pepper, and red pepper flakes (if using). Bring the mixture to a boil over medium-high heat, stirring occasionally.
3. Pack the shrimp into jars: Pack the shrimp into a clean, sterilized small jar (about 1 cup/250 ml capacity). Leave about 1/2 inch (1 cm) of space at the top.
4. Add the pickling liquid and aromatics: Pour the hot pickling liquid over the shrimp, leaving about 1/4 inch (6 mm) of space at the top. Add the minced garlic, chopped dill weed, and chopped parsley.
5. Seal the jar: Close the jar with a tight-fitting lid.
6. Refrigerate and allow to pickle: Refrigerate the jar for at least 24 hours or up to 1 week. The longer it sits, the more flavorful the shrimp will become.
7. Serve: Once pickled, serve the shrimp chilled, garnished with additional chopped fresh herbs if desired.

Tips and Variations:

– Use a variety of spices and seasonings to customize the pickling liquid to your taste.
– Add sliced onions, carrots, or bell peppers to the jar for added flavor and texture.
– For a spicy kick, increase the amount of red pepper flakes or add diced jalapeños to the jar.
– Experiment with different types of vinegar, such as apple cider vinegar or white wine vinegar, for a unique flavor profile.
