Pistachio Delight Fudge

Ingredients:

– 1 (14.4 oz) can sweetened condensed milk
– 1 cup (200g) white chocolate chips
– 1 teaspoon pure vanilla extract
– 1/2 teaspoon salt
– 1 cup (120g) chopped fresh pistachios
– 1/2 cup (60g) crushed pistachios for garnish (optional)
– Green food coloring (optional)

Instructions:

1. Line an 8-inch (20cm) square baking dish with parchment paper.
2. In a medium saucepan, combine the sweetened condensed milk, white chocolate chips, vanilla extract, and salt. Place over medium heat and cook, stirring constantly, until the mixture reaches 235°F (118°C) on a candy thermometer.
3. Remove from heat and stir in the chopped pistachios.
4. Pour the mixture into the prepared baking dish and smooth the top.
5. If desired, add a few drops of green food coloring to tint the fudge.
6. Allow the fudge to cool to room temperature, then refrigerate until set, about 2 hours.
7. Cut into small squares and garnish with crushed pistachios, if desired.

Tips:

– For a creamier fudge, don’t overcook the mixture.
– If you don’t have a candy thermometer, test the fudge by dropping a small amount of the mixture into a cup of cold water. If it forms a soft ball that flattens when removed from the water, it’s ready.
– You can also add a teaspoon of pistachio extract or a handful of chopped dried cranberries to the fudge for extra flavor.
