Ingredients
For the Ribs:
– 2 racks of pork ribs (about 4 pounds total)
– 1/4 cup brown sugar
– 2 tablespoons smoked paprika
– 1 tablespoon chili powder
– 1 tablespoon garlic powder
– 1 tablespoon salt
– 1 tablespoon black pepper
– 1 tablespoon olive oil
For the Red Sauce:
– 1 cup ketchup
– 1/2 cup apple cider vinegar
– 2 tablespoons brown sugar
– 2 tablespoons Worcestershire sauce
– 1 teaspoon smoked paprika
– 1 teaspoon garlic powder
– Salt and pepper, to taste
Instructions
1. Preheat oven to 275°F (135°C).
2. In a small bowl, mix together brown sugar, smoked paprika, chili powder, garlic powder, salt, and black pepper.
3. Remove the membrane from the back of the ribs and cut them into a uniform size.
4. In a large bowl, toss the ribs with the spice mixture until they are evenly coated.
5. Line a baking sheet with aluminum foil and spray with cooking spray. Arrange the ribs on the baking sheet in a single layer.
6. Drizzle the olive oil over the ribs and cover with foil.
7. Bake the ribs for 2 hours, then remove the foil and continue baking for an additional 30 minutes.
8. While the ribs are baking, prepare the Red Sauce. In a medium saucepan, combine ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, smoked paprika, garlic powder, salt, and pepper.
9. Bring the sauce to a simmer over medium-low heat and cook for 5-7 minutes, or until the sauce has thickened slightly.
10. After the ribs have baked for 2 1/2 hours, brush them with the Red Sauce.
11. Return the ribs to the oven and bake for an additional 10-15 minutes, or until the sauce is caramelized and the ribs are tender.
12. Remove the ribs from the oven and let them rest for 5-10 minutes before cutting into individual portions.
13. Serve the ribs with additional Red Sauce, if desired.
