Here’s a simple Saffron Cake recipe:
Ingredients
– 2 1/4 cups (285g) all-purpose flour
– 1 cup (200g) granulated sugar
– 2 teaspoons baking powder
– 1 teaspoon salt
– 1/2 cup (115g) unsalted butter, softened
– 1 cup (235ml) whole milk
– 2 large eggs
– 1/2 teaspoon saffron threads, soaked in 1 tablespoon hot water
– 1 teaspoon vanilla extract
– Confectioners’ sugar, for dusting (optional)
Instructions
1. Preheat oven to 350°F (180°C). Grease two 8-inch (20cm) round cake pans.
2. In a medium bowl, whisk together flour, sugar, baking powder, and salt.
3. In a large bowl, using an electric mixer, beat the butter until creamy. Add milk and beat until well combined.
4. Beat in eggs one at a time, then stir in saffron mixture and vanilla extract.
5. Gradually add the dry ingredients to the wet ingredients, beating until just combined.
6. Divide the batter evenly between the prepared pans.
7. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
8. Remove from the oven and let cool in the pans for 5 minutes, then transfer to a wire rack to cool completely.
9. Dust with confectioners’ sugar, if desired.
