Ingredients
– 1 lb (450g) salted beef brisket or round
– 2 carrots, peeled and chopped
– 2 celery stalks, chopped
– 2 cloves garlic, minced
– 1 onion, chopped
– 4 cups (1L) beef broth
– 1 tsp (5g) black pepper
– 2 tbsp (30g) brown sugar (optional)
Instructions
1. Rinse the salted beef under cold running water, then pat dry with paper towels.
2. In a large pot or Dutch oven, combine the chopped onion, carrots, celery, and garlic.
3. Add the salted beef to the pot, then pour in the beef broth.
4. Add the black pepper and brown sugar (if using).
5. Bring the mixture to a boil, then reduce the heat to low and simmer, covered, for 3-4 hours, or until the beef is tender.
6. Remove the pot from the heat and let the beef rest for 10-15 minutes before slicing thinly against the grain.
7. Serve the cooked salted beef with the juices spooned over the top.
Tips and Variations
– Use a slow cooker: Cook the salted beef on low for 8-10 hours.
– Add potatoes: Peel and chop 2-3 potatoes and add them to the pot during the last hour of cooking.
– Spice it up: Add 1-2 tsp (5-10g) of pickling spice or mustard seeds to the pot for extra flavor.
