Ingredients
– 500g minced lamb or beef
– 1 large onion, finely chopped
– 2 cloves garlic, minced
– 1-inch piece ginger, grated
– 1 tsp cumin seeds
– 1 tsp coriander powder
– 1 tsp garam masala powder
– 1 tsp red chili powder
– 1 tsp salt
– 2 tbsp lemon juice
– 2 tbsp ghee or oil
– Chopped cilantro (for garnish)
Instructions
1. In a large mixing bowl, combine minced meat, chopped onion, minced garlic, grated ginger, cumin seeds, coriander powder, garam masala powder, red chili powder, and salt. Mix well.
2. Add lemon juice and mix again.
3. Cover and refrigerate the mixture for at least 30 minutes to allow the flavors to meld.
4. Preheat a grill or grill pan over medium-high heat.
5. Wet your hands with water and shape the mixture into small cylindrical kababs, about 3-4 inches long and 1 inch in diameter. Make sure the kababs are evenly shaped and smooth.
6. Brush the kababs with ghee or oil.
7. Grill the kababs for 5-7 minutes on each side, or until they are cooked through and slightly charred.
8. Serve hot with your favorite chutney or raita (yogurt sauce). Garnish with chopped cilantro.
