Instructions:
Step 1: Make the Crust
1. In a large bowl, whisk together flour and salt.
2. Add cold butter and use a pastry blender or your fingers to work it into the flour until the mixture resembles coarse crumbs.
3. Gradually add ice-cold water, stirring with a fork until the dough comes together in a ball.
4. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
Step 2: Prepare the Filling
1. In a separate large bowl, combine mashed sweet potatoes, granulated sugar, heavy cream, salt, cinnamon, nutmeg, and ginger.
2. Beat in eggs and vanilla extract until well combined.
3. Stir in melted butter until smooth.
Step 3: Assemble and Bake the Pie
1. Preheat oven to 375°F (190°C).
2. On a lightly floured surface, roll out the chilled pie dough to a thickness of about 1/8 inch.
3. Transfer the dough to a 9-inch pie dish and trim the edges to fit.
4. Fill the pie crust with the sweet potato filling and smooth the top.
5. Roll out the remaining pie dough to a thickness of about 1/8 inch. Use this to cover the pie and crimp the edges to seal.
6. Cut a few slits in the top crust to allow steam to escape.
7. Brush the top crust with a little milk or beaten egg for a glaze.
8. Bake the pie for 45-50 minutes, or until the crust is golden brown and the filling is set.
Step 4: Serve
1. Let the pie cool on a wire rack for at least 30 minutes before serving.
