Ingredients:

For the Cake:

  • 4 large eggs
  • ½ cup granulated sugar
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • ¼ cup cocoa powder
  • 1 tsp baking powder
  • ¼ tsp salt
  • Powdered sugar (for dusting)

For the Filling:

  • 1 cup heavy whipping cream, chilled
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract

For the Chocolate Ganache:

  • ½ cup heavy cream
  • 4 oz (115g) semisweet chocolate, chopped

Optional Garnish:

  • Chocolate shavings, fresh berries, or powdered sugar

Instructions:

Step 1: Prepare the Cake

  1. Preheat the Oven: Preheat to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment paper and lightly grease it.
  2. Make the Batter:
    • Beat the eggs and sugar together in a large bowl until pale and fluffy (about 5 minutes).
    • Stir in the vanilla extract.
    • Sift together the flour, cocoa powder, baking powder, and salt. Gently fold the dry ingredients into the egg mixture until combined.
  3. Bake: Spread the batter evenly in the prepared pan. Bake for 10–12 minutes, or until the cake springs back when lightly touched.
  4. Roll the Cake: While the cake is still warm, dust a clean kitchen towel with powdered sugar. Invert the cake onto the towel, peel off the parchment paper, and roll the cake up with the towel. Let it cool completely.

Step 2: Prepare the Filling

  1. In a bowl, whip the chilled heavy cream, powdered sugar, and vanilla extract until stiff peaks form.

Step 3: Assemble the Log

  1. Carefully unroll the cooled cake and spread the whipped cream filling evenly over the surface.
  2. Roll the cake back up (without the towel) and place it seam-side down on a serving platter.

Step 4: Make the Ganache

  1. Heat the heavy cream in a small saucepan until it just begins to simmer. Remove from heat and pour it over the chopped chocolate. Let sit for 2 minutes, then whisk until smooth.
  2. Allow the ganache to cool slightly before pouring it over the rolled cake, spreading it evenly to cover.

Step 5: Decorate and Serve

  1. Garnish the log with chocolate shavings, fresh berries, or a light dusting of powdered sugar.
  2. Refrigerate for at least 1 hour to set before slicing and serving.

Tips for Success:

  • Prevent Cracking: Roll the cake while warm and handle gently to prevent cracks.
  • Ganache Consistency: If the ganache is too thick to pour, warm it slightly; if too thin, let it cool longer.
  • Flavor Twist: Add a splash of espresso or orange zest to the filling for a unique flavor.
