tricoloured pasta

Ingredients:

Pasta:

– 1 cup tricolored pasta (or any other pasta of your choice)

Tomato Sauce:

– 2 tablespoons olive oil
– 1 medium onion, finely chopped
– 3 garlic cloves, minced
– 2 cups fresh or canned crushed tomatoes
– 1 teaspoon dried basil
– 1 teaspoon dried oregano
– Salt and pepper, to taste
– Grated Parmesan cheese, for serving (optional)

Optional Add-ins:

– 1 cup sliced bell peppers (any color)
– 1 cup sliced mushrooms
– 1 cup cooked sausage or bacon, crumbled

Instructions:

1. Cook the pasta: Bring a large pot of salted water to a boil. Cook the tricolored pasta according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
2. Make the tomato sauce: Heat olive oil in a large skillet over medium heat. Add chopped onion and cook until translucent (3-4 minutes). Add minced garlic and cook for an additional minute.
3. Add tomatoes and herbs: Pour in crushed tomatoes, dried basil, and dried oregano. Season with salt and pepper to taste. Stir well to combine.
4. Simmer the sauce: Reduce heat to low and let the sauce simmer for 15-20 minutes, stirring occasionally.
5. Combine pasta and sauce: Add cooked pasta to the tomato sauce skillet, tossing to coat. If the sauce seems too thick, add a bit of reserved pasta water.
6. Add optional ingredients: If using, add sliced bell peppers, mushrooms, cooked sausage or bacon, and stir to combine.
7. Serve and enjoy: Serve hot, topped with grated Parmesan cheese if desired.

– Customize the recipe by adding your favorite protein or vegetables.
– For a creamier sauce, add a tablespoon or two of heavy cream or Greek yogurt.
