Instructions
1. In a large bowl, whisk together flour, cornstarch, and a pinch of salt.
2. In a separate bowl, whisk together milk, egg, melted butter, and grated cheese (if using).
3. Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
4. Fold in the grated veggies and chopped scallions.
5. Heat a non-stick pan or griddle over medium heat. Grease with oil or butter.
6. Using a 1/4 cup measuring cup, scoop the batter onto the pan.
7. Cook for 2-3 minutes, until bubbles appear on the surface and the edges start to dry.
8. Flip and cook for another 1-2 minutes, until golden brown.
9. Serve hot with your favorite toppings, such as sour cream, salsa, or avocado.
