Ingredients
– 1 cup long-grain rice
– 2 cups water
– 1 cup granulated sugar
– 1/4 cup ghee or vegetable oil
– 1 teaspoon ground cardamom
– 1/2 teaspoon ground cinnamon
– 1/4 teaspoon ground saffron threads, soaked in 1 tablespoon hot water
– 1/2 cup chopped almonds or pistachios
– 1/2 cup dried fruits (cranberries, cherries, or raisins)
– 1 tablespoon rose water (optional)
Instructions
1. Rinse the rice and soak it in water for 30 minutes. Drain and set aside.
2. In a large saucepan, combine the sugar, ghee or oil, cardamom, cinnamon, and saffron with its soaking liquid.
3. Heat the mixture over medium heat, stirring until the sugar dissolves.
4. Add the drained rice to the saucepan and stir to coat the rice with the sugar mixture.
5. Add 2 cups of water to the saucepan and bring to a boil.
6. Reduce the heat to low, cover, and simmer for 15-20 minutes or until the rice is cooked and fluffy.
7. Fluff the rice with a fork and stir in the chopped nuts and dried fruits.
8. If using rose water, stir it in just before serving.
9. Serve the zarda rice warm or at room temperature.
